Chile con Carne y Verduras
This is a mildly spicy, garlicky chile that is high in protein and low in sodium. Most canned chili's and soups contain 5 times the amount of sodium per serving that is in this recipe. So make your own and serve a large family or make it for yourself for dinner and eat the leftovers for lunches.

Ingredients
1 1/2 cup chopped zucchini
1 chopped green pepper
2 green onions diced
6 cloves garlic minced
1 can low-sodium black beans
1 cup corn & black bean salsa
1 tsp. of each; cayenne pepper, cumin and chile de arbol molido
25 ounces of grass-fed beef chuck roast cubed
1. Set crockpot on high and throw in veggies.
2. Sprinkle in spices.
3. Heat frying pan to medium-high heat and brown meat.
4. Add meat to crockpot and cook on low 4-5 hours.
